Vegan Brownies

This divine Chocolate Brownie recipe is sure to be a crowd pleaser. This recipe was not created by I AM EARTH but by an artisan baker, so rest assured that these amazing Vegan Chocolate Brownies will delight and satisfy all chocolate lovers.

90 grams coconut oil
200ml soy milk
Juice of half a lemon
165 grams coconut sugar
100 grams vegan dark chocolate
70 grams I AM EARTH Drinking Chocolate
1/2 cup almond meal
1/2 cup coconut flour
1/2 tsp baking powder
pinch of salt

Pre heat the oven to 170 C. Firstly, add lemon juice to the soy milk, stir and set aside. Melt gently together the oil, vegan chocolate and sugar. In a separate bowl combine the drinking chocolate, almond meal, coconut flour, baking powder and salt. Once the chocolate has melted, take off the heat and whisk in soy milk mixture. Add to the dry ingredients and continue whisking until its combined. Pour into a lined 20cm square baking tin and bake for about 40 mins. Cool in tin, cut into squares and dust with icing sugar if desired. Enjoy.
